Sloppy Joe Tater Tot Casserole Recipe

Hi All!

I just wanted to share a neat recipe I found a few weeks back. I found “Sloppy Joe Tater Tot Casserole” in one of our area newspapers. We’ve eaten this twice now and it’s a keeper with my family.

The recipe calls for tomato sauce, brown sugar, Worcestershire Sauce, yellow mustard, and salt to make the sloppy joe sauce. I made it faster and easier by just using a store bought can of sloppy joe sauce.

Sloppy Joe Tater Tot Casserole with Dill Pickle Topping

Sloppy Joe Tater Tot Casserole – Serves 8

1 lb. lean ground beef

1 cup chopped onion

1 can (15 oz) tomato sauce

2 Tbsp packed brown sugar

1 Tbsp Worcestershire Sauce

1 Tbsp yellow mustard

1/2 tsp salt

1 bag (32 oz) frozen tater tots

2 cup shredded cheddar cheese (8 oz)

1/4 cup chopped dill pickles

Directions:

Heat oven to 350 degrees F. Spray 13×9″ (3 qt.) baking dish with cooking spray. Brown hamburger with onion. Drain grease. Stir in tomato sauce, brown sugar, Worcestershire Sauce, yellow mustard, and salt (or can of sloppy joe mix). Cook 2-3 minutes stirring frequently until bubbly. Line bottom of baking dish with half of bag of tater tots. Pour beef mixture on top of tots. Add 1 cup of cheese over the beef mixture. Add remaining tots and top off with last cup of cheese. Bake 45 minutes or until bubbly and tater tots are slightly browned. Top with chopped dill pickles.

Note: I don’t do all of the layers. I put the sloppy joe/meat mixture in the bottom of the baking dish, add a layer of tater tots, and bake. After the casserole is baked I add the cheese and let it melt for 5 minutes, add chopped pickles, and serve.

This recipe works great for my family of three (two adults, one toddler). We eat half and then I freeze the other half for a meal later.

BBQ Pulled Chicken Recipe

There are days when I am scrolling through my newsfeed on Facebook, and don’t look twice at the recipes and food pictures that people share.  Especially when I had morning sickness, those pictures made me green.   Recently, I have been taking notice.

I plan my family’s meals two weeks at a time.  When I make up the grocery list, I use a calendar I print off of the internet from this site: http://www.printfree.com/Calendars.htm  I don’t go grocery shopping until the next two weeks of meals are planned, and I have all of the ingredients I need on the shopping list.  I save those calendars so that when I go blank on what I should make for the next few weeks, I can look back at things I’ve made.  My menu planning has become boring and lame!  I have been in desperate need of new recipes!

I made a recipe last night for dinner called, “Sweet Baby Ray’s Crock Pot Chicken”, from the Facebook page of Dail Stuart.  It caught my attention because my husband and daughter love BBQ chicken and I am always looking for easy crock pot recipes.

BBQ Chicken Breasts in Crock Pot and Sauce

Sweet Baby Ray’s Crock Pot Chicken

4-6 boneless, skinless chicken breasts

1 bottle Sweet Baby Ray’s BBQ sauce – Lrg for 4-5 qt crock pot

¼ cup vinegar

1 tsp red pepper flakes

¼ cup brown sugar

1 tsp garlic powder

  1.  Mix together everything but the chicken.
  2. Place chicken in a 4-5 quart crock pot.
  3. Pour sauce mixture over the chicken.
  4. Cook on low 4-6 hours.

When I made this, I used three thawed chicken breasts in a West Bend brand 4-qt crock pot for 4 hours and it turned out wonderfully.  I didn’t serve these as bbq’d chicken breasts, however.  I shredded the chicken and added it back to the bbq sauce.  I served up shredded bbq chicken sandwiches.  The family loved them!  They were moist and tangy with some heat!  (If you don’t want the heat, leave out the crushed red pepper flakes.)

I am so glad I found this recipe!  I have made pulled chicken before and it didn’t turn out very well.  This was very easy and turned out great!  I wonder what I will add to my recipe collection next!

Missie in the Kitchen with Rice

I think I am on week four of morning sickness and it is such a bummer!  There is so much stuff I could be/should be doing, and I just lack focus.  My biggest challenge everyday is dinner: planning and making it.  Nothing sounds good.  I can’t tell if my family wants to each what I make or not.  I was the leftover eater of the house and now we save NOTHING.  Oh, baby, I know this will be worth it!

Saturday evening I didn’t know what to do with myself after dinner.  We had just gotten done eating Burger King and I was not going to crawl in bed and spend the next how many hours under the covers, not yet.  (You cannot begin to imagine the nightmares and insomnia I had that night and I blame it on the Burger King!)  I grabbed a deck of Snoopy cards and played two games of solitaire.  I got bored with that and had a sudden urge to organize something.  I have this old box of recipes on recipe cards from my mom.  It is filled with old recipes from my mom, grandma, and other ladies that had swapped recipes long ago.  The box needed to be organized because a few years ago, I dropped the box on the floor and most of the cards fell out.  Organizing the box has been on my list of things to do for a long time.  I didn’t get very far on sorting everything, but I found some good recipes that I can use in the near future.

Included in the box are recipe cards from Minute Rice.  I am so psyched to use some of those recipes, mostly because you can make them in 20 minutes.  Last night I made their Cheeseburger Rice recipe.  So easy, and my husband thinks it tastes like McDonald’s cheeseburger.  The recipe made a large amount too.  My husband, daughter, and I ate about half of the dish.  I threw the other half in the freezer for a later time.  I am hoping the rice will freeze well.  If not, I am not very concerned right now.
